Hardly a recipe but thought I’d add it anyway as it’s so delicious!
1 beef tomato- or other fragrant variety
1 large ball of fresh, good quality mozzarella
Fresh basil, chopped
Extra Virgin olive oil
Salt & pepper
*The quality of ingredients will make all the difference here. Try to get your hands on the best you can!
Cut tomato, and mozzarella into about 1/2 inch pieces. Place them in an overlapping pattern around a plate, and toss the fresh basil all over. Drizzle with olive oil, and balsamic vinegar, and add salt & pepper to taste.
Serve it with some warm, crusty bread to soak up all that extra oil, and vinegar!
